As often in cooking, it is from an error that Sablé de Nançay was born. In 1953, a young apprentice baker of the village of Nançay, Jacques Fleurier, made a mistake in the recipe that his father asked him to prepare.
His mother then kept the dough cool because there was no question of throwing it. After cooking the next day, it was proposed for tasting to some customers of the bakery. This little cake immediately seduces with its taste reminiscent of cakes made by our grandmothers with milk skin.
Then, the little help came from the radioastronomy station that was built the same year, bringing a lot of people come to admire this huge building site. The reputation of this new cupcake is not long then to extend beyond Nançay.
Its success is not denied today. Handcrafted with the utmost respect for the original recipe, it remains a small delight made "as at home". Tasted with a white wine or a champagne, a cream or an ice cream, a tea or a coffee, one always appreciates its crunchy, at the same time reliable and melting.
